Yes, an old favorite – and some new twists. They can be formed into two thin rounds and frosted or jellied or jammed in the middle to form a Yo-Yo (¾-inch balls, 2 inches apart, do not flatten, bake 10 minutes) cookie like an Oreo. They can also receive a thumb pressed print or even a Celtic Design (Cross or Irish Clover suggestively) in the center and after baked filled with jelly, jam, or a peanut butter with honey mixture (to preferred texture).
½ cup shortening (half butter or margarine, softened)
½ cup peanut butter
½ cup granulated sugar
1 egg
1 ¼ cups all-purpose flour*
3/4 teaspoon soda
½ teaspoon baking powder
¼ teaspoon salt
Mix thoroughly shortening, peanut butter, granulated sugar, brown sugar and egg. Blend in flour, soda, baking powder and salt. Cover and chill. Heat the oven to 375 degrees. Shape dough into 1-inch balls. Place 3 inches apart on lightly greased baking sheet. With fork dipped in flour, flatten in crisscross pattern to 2 inches, add your thumb print, Irish Clover or ideal design for adding a flavorful mixture in the center after baked. . Bake 10 to 12 minutes or until set but not hard.
*If using self-rising flour, omit soda, baking powder and salt.
